The Bilona Way

Curd, not cream. Hours, not minutes.

Bilona is how ghee was made in Indian homes for thousands of years. It is slow, it yields little, and it cannot be faked at scale. That is exactly why we do it.

100% in-house

The people who make it know the trade to the core.

Every jar of Mochan is made in our own unit, by our own hands. We do not buy ghee and relabel it, and we do not hand the work to a contract manufacturer. If it carries our name, we made it.

We have cared for indigenous cattle for over five decades. Mochan is that knowledge, put into a jar.

The Bilona process

Unhurried hands, pure ghee.

Six slow stages from our pastures to your jar. Tap a step, or watch it unfold.

Whole A2 Milk

  1. Sourced from our indigenous cows, grazing freely on rich Haryana pastures, ensuring the highest quality foundation.

  2. Fresh milk is gently cultured into curd using traditional methods.

  3. The curd is churned slowly in heavy brass vessels — a labour of love that gives the golden granular texture.

  4. Churning separates the butter from the buttermilk. No factory churn, no mass blending.

  5. The butter is then simmered over low heat, allowing the milk solids to separate.

  6. The result: pure, aromatic ghrita with its golden granular texture — made right, never made fast.

No Factory Churn, No Mass Blending, No Synthetic Additives. Just Pure Ghrita.

Bilona vs the cream method

Two ways to make ghee. Only one is slow.

Bilona (Mochan) Cream method
Starts from Whole milk set into curd Cream skimmed off by a machine
Butter Churned out of the curd Cream heated directly, or factory butter
Pace Slow — hours of work per batch Fast and continuous
Yield Low — a lot of milk for a little ghee High
Texture Golden and granular (danedar) Usually smooth

Our standards

What defines a jar of Mochan.

Every batch reflects our commitment to purity, aroma, and the distinctive golden granular texture.

  • Golden Granular Texture

Achieved through slow, traditional churning, never forced or chemically altered.

  • Rich, Nutty Aroma

The natural fragrance of pure, farm-fresh ghee, a testament to our gentle clarification process.

  • Uncompromised Purity

Zero synthetic additives, no mass blending, just the natural goodness of A2 cow’s milk.

What does “A2” mean?

A2 refers to a type of beta-casein protein found in the milk of some cattle. Mochan’s ghee comes from the milk of our company’s own indigenous cows, raised on our company’s own farms and grazing freely on open Haryana pastures — milk we know from farm to jar.

Good ghrita requires patience, clean pasture, and unhurried hands — never factory shortcuts or inflated claims.

A spoon on everything warm

  • On a warm phulka
  • Over dal and rice
  • In a bowl of khichdi
  • Into the tadka
  • On parathas
  • In traditional sweets
Serving ideas only — no health claims.

What we never do

Five shortcuts we refuse.

  • Outsource or contract-manufacture
  • Blend in other milk, fat or oil
  • Add synthetic colour, flavour or preservative
  • Skip the curd and churn cream instead
  • Ship from old warehouse stock

Reserve a jar from the next batch.

Made after your order, in small batches. When a month’s batches are reserved, new orders join the next one.
